Isabel, Queen of Spain, was known to enjoy eating the tripe cooked by Ernestine Aubourg, the owner of the house. Alexandre Dumas proudly told that he had taught Ernestine the recipe of scrambled eggs with prawns tails. Maupassant in his novel Pierre et Jean described la Belle Ernestine under the name of la Belle Alphonsine.
